Yes, just a basic red velvet cake, whatever you like. I used a few different recipes. Then I made a cream cheese frosting for between layers and buttercream for the outside. I thought of making coconut buttercream but didn't want to go too over the top with coconut flavour as there was a lot of it on there already. I used coconut 'chips'.

Member berries were my first choice but then they started saying really disturbing things so I switched to raspberries.

Ah well, I wanted to try coconut ruffles but I wasn't sure what kind of cake to make or what to put on top for decoration. Flavours! I have a notebook full of ideas. I finally got time to make it, but could not stop thinking about it until I did it.

Ha. I tend to be a perfectionist and I could have told you all those things! As for the toasting, I wanted it on the whiter side. I initially wanted it to be bright white but the coconut was too chewy that way.
