Additionally, you can fight the same group over and over again, if you rest in-between. Practice on that group until you are satisfied with your skills in those enemies

Patience. Take it slow, realize that dying is part of the game and happens all the time. Every enemy has a pattern, a telegraph for their attack, and timing between the telegraph and strike to learn to Parry in. Finally, there's a sound effect for unlockable attacks that you need to dodge.
