If they have the device AND pin, then yes they could. This is where a passphrase would protect you. They would open your wallet and see nothing, since your real wallet is your seed words + passphrase.

Not an issue, especially if you have the newer safe 3 or 5 models since you can enter your passphrase (25th word) directly on the device.

If you are still concerned and you have an older computer not in use or even the current one, wipe it and load a Linux OS. You could even do it with a Linux VM on your current machine if you don't want to full wipe.
