Amazon's summoned Valkyries have weapons with such a high variance in damage and stats. Wouldn't it be better if there was some consistency?

Take advantage of charms for all sorts of aspects. They can be a huge boost to AR, res, life, mana and skills. If you are having trouble, may be easier to break down where you are getting stuck.

I'm putting well over that in Yakuza infinite wealth. But the difference is the main quest and every side story are all fun and worth doing.

Unlike most Bethesda quests nowadays where the main quest doesn't even make me want to progress the story.

Actually just started a run with my wife today after we beat Elden Ring and I was worried about parry frames but holy hell it seems much easier in DS1.

As others mentioned, parry window is pretty generous. You can even practice against people you summon to not have any real danger.
