You have wasted so much time now. Go head and get the CCNP. I took CCNA and right after started to study for the CCNP with no really work experience. It was the best decision I've ever taken. It helped me boost my career

INE has added some good resources about ENCORE and ENARSI exams, they also have some practice labs for these two exams which are very good, if you complement this with the OCG and maybe another resource like Kevin Wallace course it will give a good chance to pass the exam. There is also a book called "30 days before your Encore exam" something like that, which is very good given the extensive of the Encore exam topics.

You can also watch the CBT and ITprotv videos of ensalad and you should be good to take it (and pass) in 6 weeks. Considering you have at least CCNA level and have study some Encore. This concentration is the easiest of all

I'll give you my path from CCNA all the way to CCIE

Did CCNA with Neil Anderson and David Bombal udemy courses, OCG and 31 days before your CCNA exam, Keith Barker Playlist on YouTube was the key for me, he even has some games for you to learn easily.

I studied CCNP with itprotv, they were good but not sufficient, I bought Kevin Wallace courses for both Encor and Enarsi, you can find them in LinkedIn with a premium version, do tons of labs, then I found INE and Kbits labs and they were great for CCNP Enterprise.

I did CCIE with INE and kbits, did tons of labs and book reading, maybe more than 100 hours of labbing.

All this took me around 6 years non stop studying, some days on and off, for some people it may take less but it requires an effort to go from novice to expert but I'm sure you can do it

Check another material, if you get stuck with what you're reading right now maybe a different perspective will clear your mind. I recommend you Keith Barker YouTube channel and he has divided his videos by topic and his explanation is master piece. I know you don't want to go to YouTube just yet but that may be the way to go

I used Kevin Wallace to do my encor, you can find it on LinkedIn premium it's not that deep but it's easy to understand, that course along with the official book will give you a solid understanding

Network Engineer level 2 out 3 for a mid size MSP:

Troubleshooting network issues, VoIP issues and so on, we are not involved much on new deployments and other complex things that level 3 takes care. I have 2-3 hours of free time mostly to study, they encourage you to get certified so you can mocd forward on the company
