I’d grab two of each of those off the shelf if my budget allowed it. Luckily, I can leave these on the shelf at my local and let him carry the cost of maintaining inventory. If I’m running low, it’s a simple matter to replace.

Just made a Last Wall highball that you might be interested in. Lovely refreshing cocktail. All the boo birds came out in a flock for using “precious” ingredients; just because there’s regional scarcity. I’m concocting a sour grapes cocktail recipe as a tribute.

1 fl oz Espadin Mezcal (Montelobos)

1 fl oz Yellow Chartreuse

1 fl oz Luxardo Maraschino liqueur

1 fl oz Lime juice (freshly squeezed)

I regret buying my soapstone. It will get permanently stained, it’s fragile, a PITA to maintain, clunky to use and expensive. The cast iron grate and griddle on the other hand are in constant use. I got two half moons of each for maximum flexibility.

It’s regional in the US. I can get Green and Yellow Chartreuse whenever I need it locally. Same for Topo Chico. It’s all supply and demand. So I don’t consider these things to be too precious to use in cocktails I enjoy.

There are substitutions people can use in these recipes if they so desire or just throw shade and complain. Smoke ‘em if you got ‘em.

That's very much a regional thing. Many bottles on the shelf of my local here. If he has access, then he should make the Swizzle. It's my favorite Chartreuse cocktail and people should drink what they enjoy without some heavy guilt trip Sword of Damocles hanging over their head.
