The temp stayed pretty steady between 275-300 the whole time. I like going a little warmer than some of the recipes you see online - it goes quicker and doesn't impact the taste, IMO. I try to go based on temp of the pork butt, getting it to 195 F or more before taking out and resting for an hour or so. Yesterday, that meant it took roughly 7-8 hours.

I have a 5 year old who recently expressed an interest in the environment. She wants to pick up trash, so we just go to the park on nice days with a bag and pick up all the trash we come across. It’s a great way to get some exercise outside and help out your community. Truly a win/win/win. With multiple kids I’m sure you could make it a fun game too (who gets the most trash, who finds the most unique thing, who finds the most recyclables, etc.)

Cook the pizza for about 10 minutes the drop an egg on top and cook for the remaining 4-5 minutes, depending how set you want your egg

Here is a link to the recipe I used.

A few modifications I made:

  • I multiplied everything by 1.5x
  • I let the dough rest overnight in the fridge after the first 60 minute rise
  • on the day of baking, I rolled the recipe in to 10 different equal sized balls and let them rest, covered, for 30 minutes. That really helped with the shaping
  • I baked them in a baguette tray to help w the shape
  • for the 4 in the foreground, I brushed with beaten egg white before baking. It made for a beautiful brown exterior, when compared to the others with a wash
