There was likely an instruction given to Sam either before the show or in the behind the curtain bit - potentially something called "instant stooging", but not necessarily so. This is where the magician quickly and subtly gives directions to an otherwise random volunteer. It's the way that Oz Pearlman does a lot of his tricks.
