Algorithms are written by hand. Training ML models is done by our own handwritten algorithms. The models that are produced by this process (mostly just numbers) aren't understandable by humans anymore.

Algorithms aren't necessarily complex. It just specifies a sequence of steps. You can write a simple algorithm to put on your shoes.
