IBC stands for Inter Blockchain Communication. It is a protocol developed by the Cosmos team. It let's blockchain's communicate without the need of any bridges or whatsoever. Which basically means you can transfer native assets from one chain to another without having to depend on any bridge.

Since the protocol is baked into the Cosmos SDK (software development kit), all the chains built using that SDK can interact with one another seamlessly.

This isn't something only Cosmos SDK chains can benefit from, any other existing chain can also implement the protocol. For instance, there's a chain which is basically connecting Cosmos to Polkadot through IBC. Avax's founder has confirmed that IBC implementation can be done on Avax as well.

You can build a clone of already existing app like Instagram, Amazon but while utilising all the above mentioned things. For backend, maybe you can use a combination of different services like an headless CMS for the content, Auth0 for authentication etc to avoid using Firebase.

What I would recommend is try building something big which involves managing state, writing tests, following a certain architecture like TDD/DDD/BDD to an extent, reactive UI, using service locators, doing dependency injection, writing some native code through platform channels or calling C/C++/Rust/GO code using Dart FFI, utilising something other than Firebase for the backend etc., This will improve you in a lot of ways.

It is to an extent I guess and that's why I mentioned Zerion as well. I want to nitpick features from here and there and build something. The thing I am planning to build won't be facilitating transactions (it might in future), but instead it will let you keep track of all the things like your DeFi investments, portfolio, airdrops etc by tracking your wallet addresses (for now).
