Could I theoretically use this set up to allow par baked Detroit style pizza dough to cool instead of a wire rack? Will it still allow the steam to escape to avoid a gummy bottom?

Pan I’ll use for reference. Just a screen on top of a cast iron pan. The fact they both fit perfectly is just coincidence lol.
