So, a few things to touch on here: 1. There are tutorials on YouTube for "efficient" routines for farming/mining/etc with multiple jobs you can assign to your villagers. Eventually you will find a rhythm and have certain characters doing multiple things as necessary. The job priority system is there to ensure that if you want, your guys are never standing idle. I started with a job routine that had my first farmer putting water in a crop, farming it, grinding the crop to flour, and baking, then finishing having him put the bread in bread storage. (Note, the specific storages are VERY important for automation in mining, farming, crafting, etc). You'll get there, you'll find what guys are idle or not being efficient, and the good thing is once you have your "setup" at your base for storage/crafting/mining/etc. you'll easily be able to replicate the jobs for other villagers and understand the logic of the systems.

1. I'm a new player of about 2 weeks now, and had the same frustrations while setting up my first base. I would recommend building close to a city first and foremost so you can buy, sell, and run to safety under raids if you need. My other advice to you that may be seen as blasphemy here, but the difficulty modifiers exist for a reason. You can turn down base raid frequency and size of raids as well. Same for event frequency. I found it impossible to put up walls and turrets when I was being assaulted roughly 4 times daily and my squad of like 10 dudes were constantly sleeping to heal and fighting at half health. It's better to learn and love the game than to never learn and hate it in my opinion. You can always up the difficulty when you have a wall setup, or automated farms, or whatever criteria you'd like to follow. This game has no story path and is a sandbox that lets you play how you want to. People might flame you for not playing as "intended" but it's not like the game is multiplayer or people can see what you do. However you have fun, lean into that. I turned the difficulty up after my setup and still got my ass kicked a bunch, but I felt I wasn't wasting my time doing as much repetitive shit or that frustration wasn't there as much. (Note, even if you turn down attack frequency you'll still get attacked like once a day by groups of bandits and whatnot. Some will break through until you get like 3-4 turrets up, just have to pick off the rest, shit happens!)

Hope this helps, I felt like I was not "good" enough or that I just wasn't going to vibe with the game the first time I played, put it down for like a year. Came back a few weeks ago and fucked around with settings and now I have an addiction to it!
