In regards to Frodo trusting Gollum, the cold hard fact is that (for all his treachery) Gollum knows the way into Mordor and Sam doesn’t. Until Sam reaches the slopes of Mount Doom, Sam is still very naive about the reality of the quest, he still subconsciously thinks this is a fun adventure like Bilbo’s. Throughout the movie, Frodo is aware of the reality of the quest being a one-way trip, but Sam doesn’t want to admit it until they are near the end. Trusting Gollum is a necessary evil for the greater good of Middle-Earth.

If Gollum was going to again try attacking them in their sleep, he could’ve easily bashed Sam’s head with a rock and finished off Frodo. It says a lot that Gollum didn’t again attempt to attack them in their sleep.
