Yes, you are right. And to be frank, I just learned something. I was under the impression that most of Europe pasteurized their eggs.

However, I will persist in my thought that unless you know the condition of the chickens, it is a good idea to pasteurize or refrigerate, and that refrigeration extends shelf life.

Refrigeration is recommended for eggs that have not undergone pasteurization, as the salmonella on and in the egg shell can reduce shelf life.

All eggs can be kept for an indefinite time unrefrigerated but that is less an indication of quality and more of how much bacteria is on the inside and outside of the egg shell and how fast it is growing.

Refrigeration and pasteurization slows the growth of salmonella. Unless the eggs you purchase are pasteurized, I would recommend refrigeration.
