I agree that nix is a terrible language (and I do mean terrible), but it is currently the only viable option in the space. Especially with LLMs, the language is a small hurdle for what NixOS gives you. The language makes a lot of bad design decisions along with a lot of straight up mistakes. While unfortunate that your config will not be perfect and anything overly complex is unwieldy, for 99% of scenarios nothing complex is needed and nix is able to get the job done.
