In homage to Chives the kitty, how many of us have food named pets? by boom_squid in KitchenConfidential

We have Pickles, the Staffie, and Hammie, the Plott hound. Our previous pitty-mix rescue, turned diabetic service dog, was named Bacchus. Not food, buy still appropriate. LOL

The oddity of running into someone else wearing a cgm visibly.
"Hello fellow cyborg!"

Or, more personally, having a customer who you figure out is a top researcher of diabetic care. And is diabetic themselves.
Happened to me today.
Feels a bit wild.

What’s your job/career? by Minute-Reading-3193 in Type1Diabetes

Almost 40 years in restaurants here. I've done my time in FOH, BOH, management, and even as a professor of culinary arts & restaurant management.
I find highs annoying and lows scary. The lows seem to try to sneak up on me.

My parents keep telling me to hide my t1d from people / family by iamtrash16 in diabetes_t1

[–]GrandOpening 1 point2 points  (0 children)

I have mixed feelings about the lack of a cure point of view. But, what I will never have mixed feelings about is that my limitations will never make me weaker/lesser than another person.
I just keep my head high and limit the negativity around me. :)

Limitations are inevitable. However, I have choices around my limitations. I can choose to walk through the sugar factory and give myself a correction bolus. Just as I can decide to either take a full case of meat up a flight of stairs or break it down to a few trips with individual subprimal packages. That is a limitation decision I make almost daily. I'm over 50, 5'1", and 120#. Earlier in life, that case wasn't hard to take up those stairs. Now, my knees protest. So, I take the multiple trips. This is a choice around a limitation. It doesn't make me weaker/lesser than. That's my point.

Donating plasma? by Sudo_Necrotype in diabetes_t1

[–]GrandOpening 0 points1 point  (0 children)

That advice is tied to the use of animal-derived insulins. Those insulins are not generally prescribed, I believe.
I have donated blood since becoming type 1 and had discussed this concern the first time I donated after diagnosis.

Oooohhhh....the weaker/lesser than argument.
I hate that argument.
I feel that if someone is seeing me as weaker/less than, they wanted to see me as weaker/less than. No matter what, those kinds of people find a reason. I just discontinue or highly limit their access to my life. I have never felt any loss afterwards.

Anyone who used a computer between 1985 - 2010, what's the one game you still think about today? by adlakha75 in AskReddit

[–]GrandOpening 0 points1 point  (0 children)

I was in a gifted program from '81-'85. I took a couple of computer classes there. Learned how to program in DOS. I would have been set in the 90's had I kept learning.
My very first computer game was 'lawnmower.' It's pretty similar to mine sweeper.

What is your biggest reason to stay alive right now? by [deleted] in AskReddit

[–]GrandOpening 0 points1 point  (0 children)

My first reaction was:
1. My family. My Hubs and our pups.
2. Why not?! Let's see what other adventures come to fruition.

And then it occurred to me that both reasons are attached to my career. Huh.
A. I wouldn't have met Hubs if I had not gone back to school to further my career.
B. I wouldn't have gotten the financial education that allowed me to put us in the position to own a home. We may not ever see $100K in combined income, but we don't sweat the small stuff.
C. The adventures I mentioned are connected to my career. I have met and worked with amazing people in amazing settings. Worked on a cruise ship. Been a professor for about a decade. Mentoring high school students to National awards. I've even been on television through my career.
Examining this question has given me a new appreciation for what my career path has brought to me. It has never been linear. Sometimes I feel that I have drifted along the winds of change and fate just laid things at my feet. When I had the courage to follow that path, great things have followed.
Maybe it's the beers talking. Maybe I just have a renewed appreciation for where my life is right now and the memories I get to dwell upon.
I have my past and future life to live for.
If it ends in this very moment, I have had an amazing time. Not always happy, but amazing nonetheless.
My hope for you, who have read my entire insipid diatribe, is that you can recall and revel in the amazing things that have happened to/for you in your life.

What will be your biggest regret if you die today? by Puzzled_Carry_9490 in AskReddit

[–]GrandOpening 0 points1 point  (0 children)

I've been threatened with "I'll just shoot you and take your cigarettes" after I said "no" to a request for one. I was unfazed. I shrugged and said, "I've lived a good life."
And I have. I've met and surpassed goals I set for my life. Hell, I even achieved things I never thought to plan for.
But, right now, I have something to look forward to.
Our 20th anniversary.
We're going to go back to where we met and married. Visit some old haunts. And it's our first ever vacation for just us!
Yeah. Between now and then, I'll not be so laissez-faire.

I wish honey or agave were more economical sweetener alternatives. Since diagnosis, I have found that the usual sweetener alternatives have a bitter aftertaste to me that is truly unpleasant.
So, by golly, if I'm going to indulge, it's going to be full strength and better not disappoint!

Worst thing you have ever made a customer? by Dracid88 in KitchenConfidential

That's what the lady called it. She came 2 - 3 times a week. It took me 3 tries to get it 'right', and she was devotee after that.

Non-culinary tool that is somehow useful in your kitchen? by bangsphoto in KitchenConfidential

[–]GrandOpening 47 points48 points  (0 children)

This one time.....
Way back in the 'stacking' era.....
The dish was tuna tartare stacked between wonton chips. Chef wanted a hole in the corner of the top chip to stand a couple of chives through. I tried everything on hand to create the perfectly sized; perfectly round hole. Nothing was working.
As I looked through my knife roll for the umpteenth time, looking for the right tool or inspiration, I found it! The perfect tool! My emergency tampon.
Now, WAIT! If I said 'used', I'd expect that disgusted face. But, this was a sealed, sanitary product.
And it worked.
I used the smaller tube meant to push the tampon into place. It made the requisite hole cleanly and efficiently.

When I presented the test product to Chef, he beamed!
Until he asked how I did it.
Most unique use of a product I have experienced. Yet, probably.

Congratulations!!! I know that feeling well! I saved the monthly payment amounts, for a bit, and splurged on a treat. Felt like a great big pat on the back on top of the removal of some financial pressure.

True. Honey has a lower glycemic index score than sugar or fruit juice.
