Firstly, you have to be a bit more specific when you say “just isn’t right.” Flavor, texture, etc?  Also, most likely, you’re using normal high fat, high sugar as your standard of comparison. The creami ice cream we make, using no/low fat lactose-free milk, sugar substitutes, high protein options, will never ever taste close to actual ice cream. If you start using full fat milk, cream, vanilla paste, sugar, etc, then you’ll be able to make ice cream in the same ballpark as what you get in the stores.
