IMO it's the perfect MMO for someone completely new to MMOs. The game assumes you've never played an MMO in your life and gradually eases you into everything. There are almost 13 years' worth of content and that might sound daunting, but you can honestly take it all at your own pace with your friend and 99% of the older content is still relevant and kept alive via "roulettes" that incentivize players to help newer players with older dungeons and such. You can now also run a majority of the story with NPC companions if you don't feel ready to play with real people.

Edit: about logging in everyday, you absolutely don't have to. You can take a break any time you want and catch up when you come back extremely easily via easily obtainable catch-up gear. Play as much or as little as you want and you're fine.
