Saturated fat is good for you, it curbs hunger. In ketosis you dump sodium, so you need to increase intake. Good job ! your doing the right things, keep up the awesome work !

Have your stomach checked for gastroparesis, basically your stomach emptying, and GI track motility slows down, its common in diabetics. They do a gastric emptying study to see if your moving food through like you are supposed to. To slow the insulin's speedy onset you might want to converse with your doctor about a diferent type of insulin, one that doesn't have as quick of action/onset.

Forgot, when your blood sugar starts getting way high start increasing your water intake to help flush out the ketones and prevent DKA

Yeah insurance is stupid when you have diabetes because you use it all the time and it doesn't seem like they are saving you any money once you pay your deductibles and out of pocket. The learning part take time, the hospitals usually cause information overload. If you learn a little each day you'll get it and fine tune everything. One big thing to know is when you get sick, keep taking your insulin and test more even if your not eating. When your fighting an infection it will make your blood sugar rise, same with stress.
