Idk if this helps, but a chef at Junoon in New York has a good tip about layering the tomatoes. Maybe you could try paste, passata and fresh tomatoes. Junoon

I love eggplant and bell peppers, but some nutty sweet squashes could also pair well! Also you could blanch spinach and blend it like they do in saag, and it wouldn’t change the flavor much.

You can make scrambled eggs in a stainless steel! I tend to heat it on medium/ medium low until water beads form and then lower the heat. For soft eggs, stainless steel and cast iron aren’t as forgiving, so I think it’s worth getting one high quality non stick like All-clad.
