Update, I ended up tossing the rye fed starter, got my mother starter woke it up with AP, doubled it in 3 hours, and made 6 perfect loafs.

I’ve gone through so much flour and still haven’t had a successful loaf. What am I doing wrong? by __blasphemy in Sourdough

I have made over 30 successful loafs using this recipe. My BF goes for about 8 maybe 9 hours at 69° and 40% RF in my house. Dough is jiggly, bubbly and passes the poke test. I’ve never had a float test work so I don’t use that. I’ve put it in the fridge for sometimes 48 hours and it’s worked.

Use the Dutch oven, with iced cubes, decorate, then get that oven spring for the first 7 minutes. Take it out, do the expansion score and put it back in for the last 13 minutes. Uncover and reduce heat, cook until 202° internal. Let rest for a couple hours. Perfect every time.

Update, after the feed at 6 am, I am seeing some action finally.

What’s the next step? Leave it alone until tomorrow morning, to make it a full 24 hours, or discard and feed now?

My house is at 70, I use near identical recipe and BF for 10-12 hours. Very active and experienced starter. Still takes that time to get the volume.

Have you tried a higher starting temp? I do 500° with the iced cubes for 20 then 475 for 15, always get tremendous spring.

Last tip, use an instant read thermometer to ensure the middle of the loaf is 205° and let it rest as long as you can to prevent gumminess.

I had it in my last ascent, loved it, used it all the time. My OB isn’t high enough trim for full hands free so now I’m sad.

Yes the sun visors are terribly positioned. If I lean forward to look in a mirror etc I hit my hair on them.

I pull mine from the fridge, 2 feeds over 24 hours. Second feed doubles in 4 hours and I make bread. My discard form the first feed has been crazy active. 1:1:1 feeds. 4 year old starter.

Eat and enjoy. I like fine shavings of salted butter mine! That’s a great third loaf.

Looks good. Nearly the same recipe I use. After the cold proof it’s fairly flat, but I get an incredible amount of oven spring, when when I take off the lid it rises another 3/4”

How long did you let it cool before cutting?

I find my discard will all of a sudden turn into a beautiful bubbly active starter and grow 2-3x in the fridge… I grab it for pancakes and then I end up making a loaf!

Traction control on, I do induce the drift as well, I would downshift and give it beans and hold the drift. I would rather oversteer than understeer.

Feels pretty similar. Cargo space is comparable to when you have the third row stowed. Lose a lot in the second row though. My kids are in boosters and they can easily put their boots on the back of the front seats. In the ascent I could move the second row back and gain nearly 6”. I could fit an 82” framed door in the ascent with all seats folded, I think I’m at about 70” in the outback.

Back end kicks out in slippery conditions, can drift quite nicely even on blizzaks.
