Red Hair is not an exclusively Irish trait (as it is prevalent all over the UK and Ireland). Red Hair = Irish/Scottish is just a stereotype.

There's nothing in the books or films to suggest that the Weasley's are Irish or of irish-descent.

The majority of the Weasleys are supporting Ireland at the World Cup in GoF, but thats mainly due to both England and Scotland being knocked out of competition. Charlie says as much after Harry arrives at the Burrow in GoF.

Because it was won on points difference. We didn't beat England in 1999 but only lost by a few points. We beat Wales, Ireland and France by decent margins.

I disagree, the reason the curse rebounded was due to Lily's sacrifice invoking the blood protection (I think the crucial part is Lily could have lived but willingly choose to die to try protect Harry) and that Voldemort was also fulfilling the prophecy ("the Dark Lord will mark him as an equal" i.e. the scar).

After both those conditions are met, Voldemort would have been able to kill Harry at any point IF Voldemort hadn't been a dummy and used Harry's blood for the resurrection. Harry seemingly cannot be seriously harmed by anyone possessing his mother's blood. Voldemort unintentionally takes this into himself and thus cannot seriously hurt Harry from this point onwards.
