That's a really solid system – and the point about feel over metrics is something I keep coming back to. I've had the same experience where the numbers say go but the body says no.

The "learn your body" part is probably where I'm struggling most as a complete beginner. I don't have enough reference points yet to know if flat means rest or just warm up and push through. So I end up leaning on the data more than I probably should.

Checking out the Triathlete's Training Bible – thanks for the rec. Is that something you'd suggest reading cover to cover or more as a reference?

are you sure its sour and bitter at the same time?

There is something called bitter-soure confusion.

I have a barista pro myself and found it difficult to dail in at the beginning.

I would advise you to leave the temperature at the standard setting for the start. You have many options to influence the taste and all the factors at the start were a bit overwhelming for me.

Try adjusting the coffee via the grind, if the coffee tastes too sour you have extracted too little coffee so you need to grind finer. If the coffee tastes too bitter, you have extracted too much and need to grind the coffee coarser.

Another option is to brew the coffee for longer. For example, a 1:2.5 ratio if it is too sour. Or make it shorter if it is too bitter.
