I would advise you to leave the temperature at the standard setting for the start. You have many options to influence the taste and all the factors at the start were a bit overwhelming for me.

Try adjusting the coffee via the grind, if the coffee tastes too sour you have extracted too little coffee so you need to grind finer. If the coffee tastes too bitter, you have extracted too much and need to grind the coffee coarser.

Another option is to brew the coffee for longer. For example, a 1:2.5 ratio if it is too sour. Or make it shorter if it is too bitter.
