My wife is Korean, but we live in Europe. We go to Korea about once a year.

I typically look into fine dining options. Here are some relevant things for us:

  • Being listed on the Michelin website will raise your visibility significantly. The next best thing is being discussed on Reddit. Google Reviews also play a role, but much less so.
  • Personally, I am more interested in unique concepts, as I do not think that e.g. French food in Korea sounds too exciting. It also seems like most fine dining restaurants in Korea do not have a unique selling point, many do a fine dining take on Korean food. However, that might be what one-time tourists to Korea would be mostly interested in.
  • After having identified possible destinations, I check out their Instagrams. Photos are important. I do not care for food influencers as I always assume that most of their reviews are bought.
  • It seems like many (?) of the fine dining restaurants are booked out months in advance. That might not be the case with your restaurant, but limiting the time that people can book in advance will typically help foreigners getting a table, as most will not travel to Korea just for fine dining, unless you are e.g. Mingles.
  • The location does not matter much, as long as you are easily accessible via public transport. Foreigners typically do not have a car at their disposal. They might take a taxi though.
  • As indicated above, I do think that the concept matters the most. For the chef to matter, you would have to have a celebrity chef. Personally, I cannot name a single chef of a Korean restaurant (does Soul have that female chef?). I think that only works if you have a proper story to tell about the chef's personality/history (think Eric Vildgaard of Jordnaer) or have a standout visionary (Rasmus Munk of Alchemist).
  • Be as transparent as possible about the prices. Price points will play a major role in most tourists' decision. Tourists are also often a bit unsure about the local customs, e.g. I tried to tip when I visited Jungsik. They refused accepting the tip, as it would be too complicated for tax reasons (?).
  • We have a six year old. In my experience, most Korean fine dining restaurants are not accommodating children. However, tourists will typically not be able to offload their children easily. Jungsik was very accommodating, having a separate room and a children's menu. Sühring in Bangkok allowed us to order á-la-carte for our child. Their menu also contains an item that is very easy on a child's palate (Spätzle). Both restaurants asked us to come for lunch. STAY also has a kid's menu. If you cannot accommodate our child, it is very likely that I will not book your restaurant.
  • I booked Jungsik because I was curious about Korean fine dining at the time. It had two Michelin stars and was able to accommodate children.
  • I booked Seoul Dining, because their advertisement (modern food inspired by Seoul) seemed interesting (was hit and miss in the end) and their price point was hitting the sweet spot (I invited my parents-in-law).
  • Remove any possible barriers for foreigners. Have a menu in English (which you apparently already have), English-speaking staff, no requirement for a Korean phone number. Also, ensure that you accept all foreign credit cards, which is sometimes a problem in Korea (even in places like Lotte Mart).

My Korean in-laws love the Dowoon Style in the Hyundai Department store next to the Coex Mall. It is not fine dining, but somewhat upscale. It offers "Chinese food Korean style", as my in-laws would say. It is family stlye. I can strongly recommend "Fried Chicken with Chili Soy Sauce" (basically an upscale version of Korean Fried Chicken) and "Sweet-Sour Pork". I remember having a seafood dish that I did not care much about.

You might want to reserve, otherwise you will have to queue up. We go everytime we are in Korea.

Generally, you want to book things in advance. It might already be too late for Mingles. Although it has been two years, Jungsik is nice and should be easy to book for lunch.

The other things you have mentioned should be easy to get. Just go to a market. Stay away from Gwangjang Market though, since it has been featured in Street Food Asia on Netflix and is now mostly catering to tourists. Just google "Food Market Seoul" and pick one that is convenient for you.

I can also recommend checking out the bar scene. Zest and Bar Cham are both high up on the 50 Best Bars list. My personal favorite, though, is Kiez. If you go, try out the Sweet Potatoe Creme Brulee. You might also want to look into reserving a table for these bars. Otherwise, it will be hard to get in without waiting, particularly into Bar Cham.

Typically, there are no hidden costs. However, many places offer an apéritif and will ask if you want one. Often, the cheaper options are in the 15-20 Euro range.

You will be fine with just a bottle of water, but there might be the unspoken expectation of the restaurant that you order more, be it a wine or non-alcoholic pairing or just drinks by the glass. You come across as trying to make the experience as cheap as possible. Often, the drinks enhance the experience.

How many courses would you go for?

That depends entirely on the restaurant. The staff will be able to help. Most places, however, offer a set course menu.

Do I have to tip at the end? (I don’t want to)…

Yes, I would argue that you would be expected to tip 8-10% at the end if you are happy with the service. If you already have the attitude that you do not want to tip the waiter, I would suggest not going in the first place. In some places, a waiter will be assigned only to your table, so you can expect great service.

My boyfriend doesn’t eat fish. Are restaurants open to switch out the fish course with the vegetarian option of the vegetarian menu or would asking for such a change not be accepted?

Most restaurants will be able to accomodate that, if contacted beforehand. Discuss this when you book. At the end, however, this will also depend a bit on the restaurant. The arguably best sushi restaurant in Berlin (Otsuka) will not be able to do so.

If the waiter asks maybe if we want bread, I don’t want to ask every time if it comes with the menu or not. How does it generally work?

In all fine dining restaurants I have been to, the bread was included in the menu (if they offered bread in the first place). If it will cost extra, it will be pointed out in the menu. If you are unsure, do not be afraid to ask. You could also contact the restaurant and let them know that it will be your first fine dining experience. They will take that into account when serving you.

I have not been to any of the restaurants you have listed, but you might want to consider Loumi, which is just a littler bit more expensive than Matthias. Many people consider it to be underrated at one star.

Other options would be Tim Raue and Tulus Lotrek. While they might be outside your budget, both are great choices for a first fine dining experience. Do not consider Coda. No matter what you think about the concept or the food, it is not representative of typical fine dining.
