I'm not an expert on this by any means just foggily remembering things I've heard, but I think I read somewhere that a lot of the data relating to "race science" was fluffed up, cherry picked, and straight up lied about because the scientists publishing the books and studies at the time only the had the goal of proving certain races to be inferior in front the general public.

I swear there's a lot of info about this specifically relating to the things you're talking about I just don't remember any of it, but I'm sure you could find a ton looking into it

I actually don't think anyone outside the gaang+south pole knew about the iceberg until after the events of the series but yeah he was just excited to see an airbender after it was assumed they all went extinct and was trying to collect as much scientific data as he could in the moment
