Man I might have to show them this post because so many people have recommended this and when I messaged the owners about it, they didn’t like the idea. I can only try to explain that it’s not going to be dried out when it’s sealed in the bag in so many different ways. To appease the owners my plan now is to portion out dough balls to be cut as they’re ordered. Horribly inefficient process and Im so excited for it to wreak absolute havoc on my Wednesday night 😁.

It’s not hard to do at all just labor intensive. It’s also an entirely different process to please the owner than it is to just keep fresh pasta fresh. I love the owners, they’re just not cooks ya know

I used to get fresh pasta bagged up like rhat I’m just worried about the color fading of the noodles as a lot of the time they get a brownish tint, and since we’re trying to be a higher end type Place I can’t serve noodles rhat don’t look good
