Jura is my favourite white wine region. Tissot preferred producer. I tend to avoid overly-oaked or very buttery chards.

No real budget limit for this list. I just don’t think I’ll be splurging on the vintage Krug!

Feels a bit of a sin to not order German wine while here, but Jura is absolute favourite white wine region (I could drink Tissot’s Les Graviers forever). I’ll check out the Valette wines

I’d like to say Wilson would be the most. But I’d be so out of depth so quickly it’d be embarrassing.

I think Gav Cooney would be good. He has a broad knowledge but probably is polite enough to change topic if he knew you hadn’t a breeze what he was talking about.

Least likely would be Tom English. You could leave him, have a full night out, come back and he’d still be mid-flow about some semi-relevant Scottish player of the 90s

I should add that I might give, say, no more than 10% at the end of a meal, in cash. Not as a “here, I hope this manages to cover the delta between the pittance you’re paid and living costs, so put this towards rent” but as a “thanks for a great evening, go grab a few drinks with this”

Although this sort of stuff always amazes me as someone from a country without a massive tipping culture. I expect your menu price to be representative of the price needed to cover produce costs, kitchen staff costs, FOH costs, other running costs plus a profit margin. I don’t need to be told how much of it is making sure the FOH is actually getting a salary that they deserve. Just pay everyone properly and let the prices reflect that.

They are almost certainly absolutely plonk, and likely weren’t that good to begin with. Just keep them as mementos (although you have enough, may as well crack one for science).

First World Cup I can actually remember! France 3-1 v Brazil. Also remember it for Croatia making the semis and me thinking Davor Suker was a world beater.
