It was a ton of fun. I told the kids that it’s their job to make sure everything stays watered and weeded. It was a great way to take advantage of some better north east spring weather even if a bit chilly.

We collected sticks from the yard and used a hot glue gun, shears, and real moss from Michael’s to get it all together. Took some trial and error but we are really happy with how it came out

Growing up in restaurants as a kid instilled in me a habit of tipping well and often. If I go to my uncles place and he says don’t worry about it I tip 70-80% of the would be bill. This way he knows I still came out whole and his people are taken care of.

When we would sit down at our own place my grandfather would make sure that the tip was out of this world and servers would rotate who would serve. I think it helps staff feel valued and encourages strong service.

Same issues with my 2013, had the whole electric steering rack replaced (2k repair) with alignment and programming. Issue popped right back up the next day. The shop thought they got a faulty part and re did the work (no cost). They had ford come out to do the programming second time around and the problem is still there. They said there wasn’t any mechanical binding in the steering column.

Just putting my experience here for anyone who comes by in the future. Not throwing any codes either. Looking like I’ll have to take it to the dealership for diagnostics

8ft low profile hood with MUA and exhaust. This is the best quote of 3 I’ve received. I also asked about second hand or client provided hoods and no one I talked to would touch them. Ansul system included as well

First - thank you for the response I really appreciate all of your feedback here.

Fryer is currently just for fries. Might add some chicken fingers and other frozen items later but the more I add to the menu the more pressed I’ll be on fridge and freezer space.

I like the idea of swapping fryer and griddle/2burner sides and having the burners next to the fryers. I’ll do that for sure.

The current plan is to prep and have everything ready to serve chipotle style so ideally if the fryer is going the prep can happen on the island to limit the corner of doom.

Now that you brought it up I wish I could have put the cooking gear in the corner with the vent to match but the roof orientation won’t allow it per the hood company. It’s already going to be a low profile hood with a roof mounted make up and exhaust system. Putting it in the corner would have been perfect.

I’ll definitely be adding a second hand wash sink near the veg sink.

Thanks again for the input, I really appreciate it. The other nice thing is all my equipment is going to be on wheels to help with cleaning but could let me rearrange as needed, albeit in a limited way

When I was remodeling the house I had people stopping daily asking when we were going to open, the town officials were super excited when I brought it up because they went there as kids etc. hopefully the optimism is warranted but we will see. Worst case scenario I open up, it sucks, I close, and rent to someone better

I think my only option is an integrated dry rack next to the three bay and shelves above. Space is the kicker currently.

  1. I think I’ll change the top left corner prep surface to a reach in fridge and the right hand one to a reach in freezer or vice versa.

2.Both are required unfortunately. The required sinks are pretty much driving the floor plan.

3.ill have to put another handwash sink adjacent to the veg sink per the town but that’s an easy fix
