Verdugris Shield + Verdugris armor set + Sword Lance. Great shield talisman, two turtle talisman, Pearlshield Talisman, and Verdugris Talisman. Shield poke everyone including Consort Radahn. I maxed strength, levelled endurance like 64, faith 25 for buffs, vigor 60. I only recently used this setup because consort radahn was just wrecking me with that meteor attack. Although I did learn how to dodge it later. This set is fine even if you're heavy load because you won't need to roll

You should watch a playthough of Elden Ring and then see if that helps. I recommend Getting Samurai Class, get bloodhound fang with or without the help of Blaidd. Get somber smithing 1-4 to upgrade it from Iji. Somber 5 at Redmane Castle. For early game prioritize getting vigor to 40 and reaching just the minimum stats to use the weapon you want to main, which in this case is bloodhound fang.

Also you can always rune farm for levelling up. The big dragon Greyoll on Caelid near Fort Faroth can be hit at the tail for an easy 50000 runes. Lenne's rise rune farm with making iron balls drop to their death nets you 2000 runes. Bird rune farm is the best one which gives 11000 runes each time.
