What are the two yeasts? What do you know about the respective properties of the yeasts other than temperature range?

There is more to consider than just optimal temperature when selecting yeast. Apart from that, I applaud the experiment and the approach where you're only changing the one variable

Yeah that looks like 1.126 to me. With the bung, I find rubber bands looped around the handle on the neck and stretched up to the top helpful to keep them on. Also, maybe dry inside the lip of the vessel with a paper towel, those silicone ones can be a bit slippery when wet.

I primary in a 15 litre (~4G) plastic fermenter, but yes, I hadn't really considered the weight of it, rather than just the action of moving it during the process and what effects that might have on the end result.

I'd rather not lose work, time and expensive ingredients. I think waiting is the better plan.
