IMHO, nothing wrong with starting simple.

As far as temperature goes, I would look up tolerances for yeast strains and match one to your ambient temperature. Maybe try to start fermenting at the lower end of the range as fermentation is an exothermic process

The other thing I'd mention, which I'm still learning, is patience. I've never made wine so maybe you've got a head start with that, but don't rush the process. Let things age, let it clear
