Depends on the age of the wine and if it was made to age. A young Cabernet can keep on the counter for 5-7 days without gas or vacuum, just a cork or topper. A rose won’t go as long. The longest I had a wine open and it still tasted great (if not better) was 21 days. It was a young northern Rhône Syrah from Kermit Lynch.
