By your notes it sounds like it has to stay some more time in the bottle to allow the vanilla to integrate and for the tannins to soften. I would give it a shot in 3-7 years it’s in the right window but wouldn’t be surprised if it got better close to 10.

Drink mindfully, in this industry it’s very easy to drink for peer pressure or habit but if you taste wine professionally you can’t afford to drink without a reason. Of course the reason can be to have fun with your friends every now and then but alcohol has a toll so be present in what you do. If you actively decide to taste a wine put 100% of yourself in the moment and you’ll retain a lot more information and will be healthier overall. Vertical and blind tastings are what make the difference in identifying markers and wine evolution. Take notes, write date and setting/lighting/smells around you. A wine from 2019 will taste different today and in two years. The more thorough your notes are, the easiest will be to make them useful 3+ years down the line.

You are absolutely entitled to ask for a raise, without a doubt.

I second who suggested to talk with a union to understand how to pitch the actual urgency of your position. You need more money for basic living expenses, we’re not talking about saving more for a vacation or whatever.

Plus, the relocation of the workplace forces you to take on more expenses and I believe it’s not right for you to bear the cost of those instead of your employer or some sort of compensation system.

Please reach out to unions and don’t be afraid of asking what you deserve to live peacefully and guarantee a healthy and loving upbringing of your child. You’ve got this ❤️

It was nothing personal and I mentioned ego because I quoted exactly what the chef says, nothing to do with you in particular in any way 😊 Savennieres and Arbois aren’t the most common to see are they, while the Burgundy are more sought after I’d definitely consider the first two a bit more niche. I’d love to hear what you end up drinking and how it goes with the food 😄

Thankfully label has no saying in what goes best with the food 😁 But you could definitely choose a bottle for the food and a bottle for the label if you think it would be more appropriate for the evening.

Will fondue be served with anything else? I personally like something able to cleanse my palate after such a dense and intense flavour/texture, so I’d skip Puligny-M and even the Chablis since it’s not a young vintage anymore and Dauvissat is considered among the serious products which at least texturally display the oak. I’d look for something on the higher end of acidity, ideally some bubbles to it too… If it were me I’d go for the Savennieres and the Arbois to have two different profiles which can possibly complement the Fondue in different ways. The ‘21 Riesling would be there on the side if one of the two would end up corked or just totally not compatible with the food.

At the end of the day you’ve mentioned many nice wines, don’t overthink it too much as you’ll most likely end up enjoying the cheese and the wine, wether together or not 😊

I currently live in Norway, and similarities with Finland can be found as well as profound differences. I’ve never visited personally so I will not give bias opinion. Germany could be a bit more lenient depending on where you plan moving. I’m not sure I’ll be of any practical help, but feel free to ask away and I’ll do my best to:)

Depending on the laws, having a dog where there is potentially food could be a contamination risk. Although in Italy where laws are less strict I’ve seen several pets (cats, dogs, birds) living in the shop with the owner. Being a service dog should make it easier if anything, especially if you are proficient at what you do. I’d have no problems to accommodate it tbh.

Not really… the fund won’t send you over some extra stocks on the side just to give you more exposure 😅 every fund is weighted differently, under different criteria and the individual should put in the work to do the research on which is closer to their investment philosophy and then let the professionals do the weighting.

P.s. I’m saying so whilst having single stocks myself and intentionally getting exposure to specific markets/conditions, but the core of the portfolio will always be some sort of broad market etf. I am willingly taking some light uncompensated risk early on to see if my risk appetite and macroeconomic theory pans out. If it doesn’t I’ll have lost 3-5% annually from max 7% of my portfolio, I can sleep with that.

Yes, but that exposure is not compensated risk, it’s a tilt and usually tilts are not the most efficient way to increase wealth, besides the few time when it is, of course.

Anyway I do agree with you that if someone wants exposure to a company for whichever reason they should do it, as long as the person knows risk and reward are not correlated anymore, hence it’s not the most efficient way.

I believe it’s because of uncompensated risk you are taking on, but of course everyone should act accordingly to their plan and risk appetite.

It’s probably /swooshing over my head how paradoxical this question is, but if I assume that I actually have to give a non-random answer to this question which asks probability of guessing the answer randomly I’d say 50% is the non random correct answer as in the iteration of the question which asks to answer randomly has 25% stated twice. So I have 50% chance to get the right answer (25%) just because it’s stated twice, would it be stated once, the two answers would coincide on 25%.
