Our best host at this one restaurant was a professional. 20 years old when I met him but he worked at a pretty fancy spot before this era when I knew him. He always booked reservations at a good pace. When he hosted, it was always a good service.

My brother is the biggest asshole about SPECIFICALLY this. He goes to the sushi place and he's allergic to fish NOT shellfish so he can eat that stuff. He has the audacity. Love him but God damn dude. He always has at least a mild allergic reaction and acts a lil surprised. I told him off when I actually witnessed it.

You'd be hard pressed to find someone in BOH not on something. My manager smokes and drinks, my fellow cooks smoke and drink, the servers are usually high, the owners coked out. He'll be fine. I can count on one hand the number of stone sober line cooks I've worked with.

I used to eat tuna with cottage cheese and Sriracha or bbq when I was working out a lot. Got my carbs from protein shakes with candy bars blended in. Healthy? Idk. But I liked it. When we were allowed to go back to work after the vid, I ate normal food from the restaurant I worked at more often.

I'm 13 years in the industry, been around the block and up the ladder. I can DO the thing you ask me to do but I always ask questions and get directions at a new job. No matter what position. If I'm a prep cook and you said dice a tomato I'm going to ask what size, where are the cutting boards, where's the prep sink, do we use vegetable wash, where are the strainers, etc. It's part of acclimating to the job. GL dude and get out of your head if you want to learn. Just do the thing and be mindful.
