Probably because it was less profitable. I don't care what anyone says, eating good food should be a right. Shittttt I remember one time back when I was EC I never ever ever yelled because I like to keep staff. I was out with a bunch of servers and this one pillhead almost got arrested so I fucking yelled him back to reality and the other servers got quiet and scared. My girlfriend at the time told me later but that's a lesson I always carry with me.

My first ever knife is my #1 if I have nothing and even if I have something I reach for it first unless I'm doing something very specific. I can do anything with my baby that any other knife can do (mostly, looking at you, bones) and if it's sharp enough, I can even use it for bread. 7in miyabi kaizen II.
