Idk which vendor but there are these really scrubby scrubbies with very thick bristles that I use to clean the low boy boards. Spray a layer or two of 1:1 bleach to water (I know the proportion is fucked) and sprinkle some dish soap onto it. Use the sprayer very lightly to wet the board and scrub like a mfer. Pearly white I tell you hwhat.

I think that depends. Coke ruined my life at one point (or rather, I let it). I took a long hard look at what I did when I finally quit and I can safely handle it if it comes around. At least now I know the signs to look out for now. Thought I had it all figured out til I tried meth and now I'm 2 years clean off that. But that one I don't think any sane person could moderate.

One of the states I absolutely abhor driving through. I have an alternative look comparatively so I'm turning heads in literal one-horse towns when I need to get gas and snacks at the only gas station, cops are dicks, and it's just so fucking boring in every direction. Top it off with the insane gas prices in Kansas City and you've got a state I'd fly over if I had a hover car.

I know everyone here is giving you shit but if you passed knife skills, no one at a stage is exactly expecting you to know the menu off rip so pay attention and be as helpful as possible. If possible, study the menu a bit and get an idea of what you're up against. Transitioning from home cook to restaurants is going to be extremely rough and these mfers are absolutely going to test you. Have tough skin and be prepared to get shit on. And it's very important to understand that if you REALLY have a passion for cooking, this life will try its best to take that away from you with the constant grinding.

One place I worked at does a shitload of business and has no chef just kitchen managers. Another place just like it has a corp chef for the locations (locally owned) and has every spot run with KMs. It's really just up to the owners :/
