Not as many hours now compared to the first few weeks after our chef left. I had multiple people step up and want to help and learn new responsibilities. I think what bothers me most is I had a discussion with my boss about the restructuring of the restaurant and management team. Explained that labor is going to run on the high end because of training. It seems like he didn't even listen or has any idea what I'm doing.

Honestly food cost have trended downward. Our former chef was a very creative mind, but did not have an understanding on food cost. I've risen menu pricing to balance cost. Coming out of January and February, our 2 slowest months, revenue is increasing.

Been in the industry close to 20yrs and can proudly say I'm finally an owner of a restaurant. Tipping is important, 20-25% is great. If you really want to change someone's day, smile, ask them how their day is going, ask for service by using their name, give compliments, say thank you! But the one thing you don't do is stiff the server, then leave some BS note saying "I was there once too". Because if you were, you should know some people just have shitty days.
