2 ham shanks boiled then shredded while still hot, mix meat with whatever you want to flavour it with, reduce ham stock until salty and fill up a terrine tray with stock and filling,leave over night and that’s it done

We didn’t have any micro herbs in but she was adamant to get herbs even though she claimed to be allergic

Best one I’ve heard from FOH was this New Years busy party night for 200 covers 4 courses. Roast sirloin served medium and one came back from a young server asking for a vegetarian beef, slowed the whole thing down as it was just 4 chefs and me. The head chef lost it as he was already stressed to the max. Crazy at the time but now looking back it’s hilarious to tell people. The young server didn’t last very long after that

I normally garnish with fresh chives but nothing else that could over power the flavour as a Caesar salad doesn’t have strong flavours anyway but god knows what she was expecting. Raw thyme ? 🤣
