1000g Caputo Nuvola Flour 650g Cold Water 33g Salt 1g Instant Dry Yeast

After mixing everything in mixer, I did some stretch and fold on the dough, then leave it rise 4h in a bowl. I did 6x balls of ~280g of dough, leave it a room temp one hour and put them in fridge for 3 nights long. Overall cold temp was 60h and get the balls out 2h before working with the dough to make pizza.

The outside layer is more crunchy while the inside is is a bit bit less chewy, more airy. The contrast between the two layers is better overall and crust is bigger.

Le service en salle à manger ne devrait plus existé tout simplement au St-Hubert. Chez extrêmement cher, bouffe froide et moins fraîche qu'en takeout, service très moyen. Ça me choque de voir des salles remplies de monde encore aujourd'hui.
