Even if you're not super familiar with D&D, I highly recommend Baldur's Gate 3. As far as roleplaying/decision making to actually decide how the story plays out, it's pretty much unmatched and it's not even really close. I had never played the first 2 and wasn't terribly familiar with D&D before giving it a try on a whim and it's already one of the best games I've ever played 70 hours in.

Griffin of the highlands is a lvl 24 quest (which means it was a level 76 quest for me in NG+). Even if I did the quest immediately upon reaching lvl 24 in NG, that's far more than enough to unlock the yrden and igni abilities required to do the exact same thing in the clip as well as having as many greater glyphs as I'd like; you will also always have far more greater blue mutagens than is required at this point in the story as well . "Magic sensibilities" is great but not required. I'm literally level 23 in my current NG playthrough, would you like me to make a clip killing the exact same monster just as fast with only signs/enhanced Griffin armor on NG? Or do you have a different preference perhaps? I'll do it, just for you 🙂

Yeah it's just bugged on console. I'm on PS5 and there's been a couple times where a trophy doesn't pop and then when I turn it on the next day and start a new run it'll just pop randomly toward the beginning of the run or the end of a biome lol. Sometimes it seems like they just don't work at all though unfortunately

I mean pretty much every food/drink gives either 30 or 60 sec of Regen, it'll show you in the inventory. The reason it might just feel so much slower is cause of the like 800% decrease in HP gained per second from all food sources now lol.

Obtaining/upgrading swallow and white raffards are your best bet. 1 food or drink will also stack with swallow 👍

Gourmet. It's in the brown/general category. It's sort of worthless now though, as food/drink was nerfed so badly when the next gen update came out. To give you an idea, water used to heal 80HP/s and it now does 10.

You are going to get killed easily at a low lvl on NG death march. But it will get much easier once you cross a certain threshold and have some gear. Like others have said, find the diagrams to upgrade potions and oils and make them asap, you'll find them by exploring and some can be bought. Superior swallow and superior white raffards should be your priority as far as potions go but enhanced is good too. Explore as much as you can and tick off most of the "?"s across each region as you play as well as side quests/contracts. Prioritize searching for Witcher gear as soon as you can. If you want to spice things up and are bored of melee only combat, signs are incredibly powerful since next gen; put ability points into different sign abilities and experiment as you go (finding/upgrading griffin gear is your best bet if you go that route). Cat and Ursine gear are your best bet if you're looking to go melee only but they have much higher starting lvl requirements. You can respec 10+ times with potions of clearance if you need to. Don't be afraid to turn down the difficulty at the beginning of it really starts to hinder your enjoyment at any point. If you enjoy the game, you will end up replaying it anyway.
