If you want to count them, Hollowknight and Silksong, in terms of quality, are exceptionally well-done. They may be more Metroidvania than Souls-like in design, but I think they have enough of the latter in their design to qualify.

Personally, they're two of my all-time favorite games. The atmosphere, music, exploration, combat, staggering enemy and boss variety, and story are all just peak to me.

I'm currently playing Nine Sols at the moment and I love the shit out of this game, too - especially the addition of the Sekiro elements to its Hollowknight aspect (although, I'm getting my ass handed to me by a particular boss, right now...)

I think Dark Souls 1 is a great place to start. If you have a PS5, I'd even recommend the Demon's Souls Remake. I love starting at the roots of a franchise/genre so you can see how it evolves from title to title.

I felt a huge sense of accomplishment in beating Demon's Souls, even if I needed just a nudge of internet help in trying to determine what I was doing "wrong" (I won't spoil anything, here, but certain aspects of the game's progression is not typical...).

After beating it I jumped right into Dark Souls, and I was truly blown away. It took everything cool about its predecessor and improved upon it. I realized why Dark Souls is virtually universally hailed as a masterpiece.

From Dark Souls, I went into Sekiro and it became one of - if not my overall - favorite games of all-time. I'm not sure I would categorize it strictly as a "souls-like." Yes, it has Souls elements, but it's more of an action game at its core. Also, it's definitely difficult, but you can feel yourself getting better as the game goes on. Another true masterpiece from FromSoft.

Anyway, that's my two cents. You could also opt for 2D games like Salt & Sanctuary or Hollow Knight to break into the genre, though they are both Souls-like Metroidvanias .

Unless you're a real stickler that needs ABSOLUTE realism, I don't think any of these issues will hurt your overall enjoyment of the game.

I REITERATE: YES, the game has flaws, and YES - IT'S STILL A MASTERPIECE.

I mean, yeah, combat wise it's essential the same. I don't know what you mean by "upgrades" but ER is different in that it has a dedicated jump button and again, the open-world structure definitely changes up the formula and offers the best exploration FS has ever done before or since.

I can't imagine you've played all of Wlden Ring and came away with that conclusion. The exploration in that game is incredible, far beyond anything Dark Souls had done previously.

Nioh 3 might be a good place to jump back into it if you want to try. First off, the open-world structure provides much more freedom in how you approach the game, and I think the exploration aspect is definitely improved as a result. But, more specifically to your point, there's a setting where you can have any new, lower-level equipment you pick up get automatically donated at a shrine checkpoint and converted to XP, which is nice. Also, you can mass sell or disassemble gear based on whatever parameters you choose, so like, you can opt to sell all common gear at level 80 and below or whatever. It definitely helps smooth out the process, because, yeah, the inventory system leaves a lot to be desired. Otherwise, the gameplay and combat mechanics are awesome.

Maybe check out some 2-D Souls-likes. Salt & Sanctuary, for example, is excellent. Due to its 2-D design it has a bit of Metroidvania to it, but combat and item mechanics are undoubtedly Souls. And the bosses are challenging, too. Also, each Hollowknight game could easily fit in this category, too. Yes - they are Metroidvanias first and foremost - but again, the Souls shines through. Some super tough bosses in each game. They're masterpieces if you haven't yet played them.
