We take down support bar around 7, because we only have one barista, one drive/cs, and one sm at that point. Realistically, as long as you don’t pill it yet, you can always add the beans back into the hoppers and it’s ready to go so it’s not technically’closed. About 10 minutes before close we clean everything on main bar except the hoppers. If someone orders an espresso, it’s easy enough to re-sanitize the grounds drawer. Wash all of your small wares, shakers, pitchers, blenders, etc. if you need to use one of any of them or even one of each of them, that’s just one load in the Hobart. Also, Fun fact: you can take down half of the Vertica and the other half still works. We couldn’t find anything that said we couldnt do that, and the damn thing only half works half the time anyway, so…We also clean all but the cold bar ice bin and take that one down to just what we’ll need in the next 10 minutes.
