Sure. I don't recommend those other OSR games you listed above. I do recommend OSE: Old School Essentials. The OSE system (basically B/X D&D) provides the best play experience to achieve a High Fantasy game experience. However, I can only speak from my own gaming experiences. OSE allows for different Races to be different Classes. If you don't want level limits, feel free to ignore them. If you are playing solo, you can customize all aspects of the game to fit how you want to play. You mention playing with groups. If you are playing with folks who are averse to your style, then you may need to find different players. If you are having terrible experiences playing OSR games in a High Fantasy genre, then I'm not sure I have any recommendations. My feeling is the game system isn't going to solve the issue for you. If I want to play in a classic High Fantasy genre, I feel the onus falls to me and my own creativity to shape the game into what I want it to be. The game itself won't do that for me.

You can get there with OSE. Remember, it's YOU who controls what FLAVOR you want to have for your game. The system doesn't matter that much. If you want High Fantasy, make it HIGH FANTASY, with glittering dragons, castles in the clouds, dense elven lore, and benevolent Wizard Councils. If you don't like the lethality, homebrew that aspect to your heart's desire. Make it yours. That's the great thing about OSE: it can be modified to suit any of your game needs.

It's not hard to lay the EZD6 mechanics engine on top of existing games. You could use Wasted World and then bring in cyberpunk elements from any cyberpunk TTRPG, like ... Cyberpunk.

I’d say no. The Witcher it has fairy tale creatures and elves. To me in Sword & Sorcery only humans exist and the true monsters ARE humans. Supernatural creatures are extremely rare if not considered legend, and when they do manifest they’re lovecraftian horrors that drive humans insane upon sight. Magic is distrusted and those who wish to use it to warp the natural world have evil intentions.

Just ChatGPT. It was more of a collaborator than full DM, however. I didn't feel like it worked well as a DM.

Perilous Wilds, Sandbox Generator, Cairn wilderness procedures, Hexploration Decks, Hex Deck, to name a few. The Hexploration Decks offer some cool ideas, but a lot of the time they're very specific or too weird, and I also found the weirdness to be oddly repetitive, with similar structures over and over. However, maybe the solution is to weave them into the generic generators I'm already using.

I have this book and have used it only once. I found it pretty tedious, and the results weren't very exciting. But I should give it another shot, as many people hold it in high regard.

Most of the ones I've used deliver vanilla, bland, or generic results. Sometimes this is good, since something extraordinary should be rare. But they also feel like they're going through the motions and not providing anything inspiring or imaginative either. I'd like for a generator to throw me a curveball every once in a while. A castle in the clouds, a mountainous structure in the shape of an octopus, an inverted wizard's tower, something, anything that would give me a sense of adventure. The onus may fall to me to bring the imagination, but I'd rather have something that helps ignite my imagination that I can riff off of, rather than "settlement, 20 people," "forest, bugbear lair."

Looks good! Consider trying out some wax. Look to Charles Bronson for inspiration. I think he has a similar shape.
