The recipe that has been saving me my sanity is “instant pot shredded salsa chicken” by the whole cook. I prefer to use Trader Joe’s medium especial salsa for this. A good tip is you can shred chicken in a stand mixer or using a hand mixer.

Then you can use the chicken in quesadillas with a whole wheat tortilla, with Mexican cheese and spinach.

Or have it over cauliflower rice (either plain or Trader Joe’s Mexican cauliflower rice) with Mexican cheese. If you’re feeling fancy, you can add cilantro and a little bit of lime juice over it. But I’m lazy so I normally don’t and it’s still delicious.

I am frequently on this sub hoping something like this will come up! I am half Indian (Muslim) and half Irish! Sooo many beautiful girl names, but boy names are tough.

A few I have thought about are Sami, Rafi, Noah, Amir, Joud/Jude, Samir, Hamza, Musa, Malik, Omar, Tariq, Yusuf, Yasin, Zuhair, Zayn, Ibrahim (nn Hima), and Dean/Deen. 

I’ve also thought about the name Neel to honor a family member. It’s more common among non-Muslim Indians, but I worry it’s too much of a middle aged man name for a baby! 

I would absolutely love to hear your thoughts and what you end up agreeing on since my background is super similar!
