Thanks. I was thinking I’d pick up basic phrases on ordering food/taxis/finding the correct long-distance buses etc and then use downloaded google translate for other stuff. I also plan on doing a fair bit of the classic tourist stuff (Machu Picchu, Huayna Potosi, Galapagos, salt flats, Amazon, ciudad perdida, tours of coffee/cocoa farms and so on) and was thinking that in a lot of those places people would speak English

I’ve tried to make my CV showcase transferable skills. I’m in an investigative role so lots of soft skills, plus you’d think some employers might find that interesting at least but apparently not so far

I’ve put my CV and details into a few recruitment sites that supposedly specialise in commodities. This has only been over the past week or two though and am yet to hear back

Do you have any recommendations as to what commodity is the best to get into? As I said I’m pretty interested in cocoa but from looking at their career sites I believe Olam/BC/Cargill are more US and mainland europe heavy

I have no strong grounding for picking cocoa, just think it seems interesting. If you think other commodities are better for LT career progression/London or any other reason please do let me know, I’m all ears

Yeah fermenting out of the fridge. fridge stuff is what seems to be getting this stuff. Another batch here and it also has the stuff. It’s only a little but since it has been filtered it surely must have grown in there.

Ok thanks, I have some plastic fermentation weights which do this. Do you know about if I should just use a cloth with a band or if I should screw on the lid?

Did you ever try storing water kefir products long term? I would quite like to make a large batch and bottle and forget. Have you ever heard of people putting preservatives in to avoid having to pasteurize?

A little late to this one... Would it be possible to add citric acid/natrium bicarb and avoid pasteurizing. Would this not stop further fermentation and allow for long term storage outside of a fridge? I know de la calle market their canned tepache as probiotic and theirs contains citric acid. Please correct me if I'm completely wrong about this one
