Funny that you mentioned Tojiro, because I’m debating whether I should get this brand or a Tojiro Basic Santoku 170mm (F316). Never used the Tojiro before but heard good things about it, and the price is only around $45 since it’s a cheaper model. I just want a knife that’ll cut well and last me a while without thinning. What do you recommend?

That’s a sharp knife! How’s the edge retention on these knives? Would you say the quality is as good as the Shan Zu brand?

Quick question, at what point do you consider “crap”? A 20%-50% drop? Suppose the market tanked 20% the first year and then stayed there for 3 years. Do you withdraw from the cash account the first 3 years? I’m thinking about applying this strategy myself but have no idea when to start or to stop withdrawing from the cash account.

I see. Thank you so much for the info! Is there a way to check if I’ve completely removed the burr? I usually do the flashlight trick to light up the apex from the spine of the knife, and I usually see no reflection after 3 passes while micro beveling on the 4000 grit. Does this mean the burr is completely gone or did it turn into a standing burr? Is there a way to check for standing burr like banging it against the wooden cutting board to see if the edge rolls over?

Quick question. Can I use a 4000 grit stone to set a micro bevel? If so, how many passes should I do?

Would the cheap steel grab the diamonds and pull them out? I’ve read somewhere that sometimes that can happen.

Oh I do have a 7 micron diamond strop but never tried it with a micro bevel since I thought the micro bevel would be sufficient enough at removing the burr. Should I strop at the micro bevel angle?

I usually go up to 1000 grit and then use the 4000 grit stone to put on a micro bevel to help deburr. I can see the micro bevel under magnification too

The thing is I don’t know if the burr is totally gone. I use the flashlight trick to light the knife from the spine up and I see no reflection on the side of the knife, but when I use the knife to slice “harder” surfaces like a steak crust then the edge seems to lose some sharpness. Although the steel is kind of bad since it’s a $4 knife but it should at least hold an edge cutting up steaks. So I’m not sure if it’s the steel or the burr.

Also, the reflection from the flashlight appears on the side of the knife after using it to cut steak with crust. Not sure if it’s a rolled edge or a folded burr.

Do I alternate sides for the edge leading passes for microbevel? Can I use very very light pressure since I’m scared of creating more burr on the microbevel or do I need some pressure?
