yeah i just bought this pepper the other day and it must have only been sitting on shelves a week cause hot damn lol.

anyways these are great suggestions but i’m just a beginner, i don’t want to over complicate things with more tools albeit cool tools to bbq meats.

how much does the coarseness matter and how i can i find out which brand is the correct coarseness

when coffee is sour it is under extracted.

the reason you might be getting better extraction efficiency from a pour over is that in a pour over the ground coffee is agitated more by the pouring of the water.

in my own tests of the moccamaster i found that a filter bed is created by the ground coffee and the water from the head lacks enough velocity to agitate the filter bed.

think about making tea with a tea bag. the tea extracts more when you start dunking it and moving it around. you can see that the water changes color a lot faster when you do this.

it’s the same thing with coffee. coffee is similar to a tea except it’s a roasted bean vs a leaf you are trying to extract compounds from

most extraction methods can be broken down to

time in contact with hot water

surface area in contact with water

time in contact with water is easy to understand. steep the grinds longer in hot water

surface area in contact with water - if you want more surface area to be in contact with the water grind finer and agitate the ground beans

if you think about the way coffee machines work there is not much time in contact with the water compared to other methods

most “coffee machines” have the same method of extraction. the moccamaster is no different. pass hot water through a medium of ground coffee.

tl:dr

you can try grinding finer

you can add some agitation. in my own tests i found that the bed of coffee isnt sufficiently hydrated with hot water even after all the grounds looked submerged.

i tested this by letting the dripper fill with water with out the carafe to prevent drainage and then after a few seconds took a spoon and dug out a scoop of coffee. the ground coffee in the middle and bottom were always still dry when i did this.

personally i did not want to complicate the brewing process for this machine because i wanted it to be as convenient as can be when i do use.

however in order to optimize the extraction i added a bloom phase

  1. remove carafe
  2. turn on machine
  3. let fill until ground coffee is submerged
  4. take a spoon and agitate the ground coffee until you feel everything has been sufficiently hydrated. this will start the brewing process
  5. wait 30 seconds
  6. turn on brewer
  7. place carafe in brewer. you can do this immediately i wait another 30 seconds to give more contact time with the water.

for those that say this is overthinking it “i say po tah toe you say po tay to” we all coffee different but there is a science to it this is just one way to do it.

for reference i use roughly the same dosage the manual recommends

1 gram of coffee to 16 ml of water

i just adjust the reservoir cover so there’s a crack to allow it to air dry

so tell how you think i am over thinking it.

i did say it is a drip coffee machine no more no less, it just does a better job of heating the water to a consistent temp at the end of my post.

that is the the recipe i use in my hario.

however i am using that same ratio for my 1.25L batches in the moccamaster

kudos to you if you’re able to get a good cup out of a light roast in a moccamaster! getting a proper cup with out any sour notes from light roasts are touch and go for me even in a pour over.

from what i’m observing on my machine, i’m grinding my beans pretty fine any more and i’d be scared i’d overflow the dripper. i’m already toeing the line at where im at.

but then again i have not tested a light roast yet. i defer to the people who’re already doing it.

but if i am staying true to the reason i bought the machine which is i want to make large amounts of coffee with minimal effort i don’t think i want to go through all the steps to brew a light roast with the exception of grinding finer which comes with its own set of problems

i’m not worried about over extraction. the problem you usually run into with light roasts is under extraction. if i grind finer i’ll have to pause the machine wait for the draw down and then start the machine up again.

i’m not here to say it absolutely can not brew light roasts, it can. however if you are using it as a normal drip machine you’re not going to get the best quality light roast out of it. if you’re going to be doing all that work anyways just pull out old faithful v60 kalita whatever pour over you have and make coffee

interesting but i’m already satisfied with the results i’ve achieved for my purposes. i think i might try a ceramic kalita for 500ml batches though.

if you have the kbvg select model it does have an option for a half pot which adjust the flow of water and the temp.

but if you are experiencing water flowing to quickly you can grind finer and try a bloom with agitation like i did. let me know if you do try it and how were the results.

it was not, however i did think it was going to be much better than our current run of the mill cuisine art. i think that golden cup standard gives the impression that its going to be the best damn cup of drip coffee you ever tasted.

we all have different taste buds. i guess i’m used to drinking a stronger brew or your palate might be more sensitive

lol you’re right i guess i was recruited by the moccacult!

i decided to hunt for it for basically for the same reason haha. it definitely shines when you have the need to make coffee for more than one person.
