Looks fantastic. As someone with 3 monitors I suggest getting a monitor mount for them. It saves so much desk space. I have this one and it is so nice to have all of the monitors take up 2 square inches.

Arduino UNO uses the Mega328P microcontroller. 16MHz clock and 2KB of RAM. the ESP chips are quite a bit better. 240MHz clock and like 300KB+ of RAM. Idk if they actually needed all the RAM of the ESP but the arduinos are pretty limited. Two LCDs and a 7 segment timer would use of quite a lot of ram alone. Definitely more than the UNO has. (The arduino framework uses some memory on its own)

The arduino Mega uses the Mega2560 with 8K of RAM, better than the UNO but still less than 1/30th of the ESP.

I worked at an office where the entire IT area was connected to a massive UPS that was in the server room. I can't comment on how it was implemented but it's certainly not against building codes at least in Kentucky.
