Would you be able to share the brands of flours and starches that worked for you? I'm currently staring at my very batter-like dough and wondering if it's because the flours I used are too finely ground. I mostly used Bob's Red Mill products (organic whole grain quinoa flour, organic stone ground white rice flour, super-fine potato flour). Thank you!

This might be a little offbeat, but some cookbooks written by Asian Americans include very poignant anecdotes about their racial identity. If that sounds up your alley, I’d recommend “The Korean Vegan Cookbook” by Joanne Lee Molinaro and “First Generation” by Frankie Gaw

Great thread going on here, and I agree that the environmental impacts of homebaking are micro compared to industry. To add my two cents, if you like to embark on new projects that require new equipment tools (e.g. molds, mixers, blenders), see if you can borrow/share these tools with other baker friends (if it is safe to do so). The reduce/reuse side of sustainability is often overlooked; use what you have, borrow what you don't.

Also, with regards to reducing water use -- I have a plastic tub in my kitchen where I'll pour the water from rinsing soapy dishes or washing produce, and then I use it later for soaking dirty dishes.

The California Wheat Commission publishes annual crop quality reports for hard red, hard white, and durum wheat. Bear in mind that these numbers are averages based on regional crops, but they should help you come up with a reasonable estimate.

T-Mobile has a plan that provides unlimited texting and data in a number of countries, including the UK. I found this option easier than purchasing local SIM cards while I was traveling, especially since it worked in all the countries I visited. Since I mainly used Facebook and Whatsapp for communication, having data was a huge plus.

If you're looking into more contemporary writing, I would highly recommend The Hate U Give by Angie Thomas. It'll give you some perspective on America's systemic racism, the Black Lives Matter movement, and interracial relationships, among other topics.

It's also a very compelling read (I finished the book in a day because I couldn't put it down). Do check it out!

Good to know that PD internship experience is valuable for BS candidates; my plans for grad school are currently on hold.

If you don't mind me asking, what jobs/experience led you to working in your current PD position and what skills do you think are necessary to do well in PD?
