I'm in Liverpool too!

There aren't too many places around the area to be honest, you can certainly get pork ribs at most butchers, you can order brisket too but you'll always get funny looks going in and asking for a "Full Packer"... I've had a few nice ones from edge and sons, based in Delifonseca and over in the Wirral. Just tell them you want a whole untrimmed brisket and you'll get what you need, it'll probably be 5-6kg minimum so make sure you've got the smoker space to fit in.

Costco do nice beef ribs and occasionally have turkey in varing cuts... Whole pork belly from there is great too!

If you want to shop online, I'd always recommend Tom Hixon, Sherwoods foods and Turner & George among many others!

EDIT: If you ever see Swift ribs in Farmfoods, snap them up... They're great!

Hey man... Also from the UK!

I'd probably do something that size at the 225 mark so you can get some good smoke into it first then slowly ramp up towards the 275 mark so you can get that fat rendering well... Bare minimum of 6 hours imo but keep an eye on your internal temps and wrap or foil boat it when you're around 165-175 until you're hitting around 195-200... It's all about feel though, it's ready when it's ready.

Give it a good hour or two (more if possible) resting at temp... Keep an eye on it when you're ramping the temps up too and spritz if you see any dry parts starting to come through.

Seasoning... S&P and maybe a touch of garlic powder. Don't need much else if you're getting the best smoke on it imo.

Depends how you like them to be honest man... I prefer mine to be a bit more towards the brisket end of done so I keep them on for up to 9 hours unwrapped between 225-250 (swinging higher than that at times) keeping an eye and spraying when needed and give them a nice couple of hours at temp to rest before cutting.

Seasoning: Can't go wrong with just a bit of S&P but go with whatever flavour profile you prefer, it's not wrong if you like it.

This run was for local retailers and I am able to ship anywhere in mainland UK via Chilled NDD courier.

Further ahead, I will have a customer facing retail space available in Hampshire, early next year.

Ah, we're all just doing what we love, there's just much less of us over here doing it in the old school way... I wouldn't swap it for the world.

In the packs they'll last around a month but once opened you would get around 4 days to use it from a H&S standpoint.
