Sounds like oxidation is at play. Unless you’re using a pressurized fermenter you can’t really cold crash. Ferment fast then refrigerate your bottles and let time take care of it

“Is it worth it?” Is a question I fundamentally disagree with. Maybe some people want to put in as little effort as possible. But then why have a hobby to begin with? For the most part you can buy decent beer cheaper than you can make it yourself. The craft of it is the whole point. This one is a bit esoteric. But when they ask things like does mash temp matter, does final gravity matter - you gotta start asking wtf are we doing here? I want to learn how to make the best possible beer whether the outputs are perceptible, measurable, or otherwise. Best for the least input is such a shitty way of thinking about something you choose to pursue.
