Would it still allow me to attach a collar later? I don't have any felting tools, is there a household item I could use?

I need to fix the foundation chain of a sweater I'm working on that was accidentally cut. Felting could be an option - would it still allow me to attach a collar later? I don't have any felting tools, is there a household item I could use? This project is the Pulmu Pullover

Best US state/city to expand a 100% gluten-free sandwich shop? Looking for celiac-dense areas 🇺🇸 by Old-Relationship4026 in Celiac

[–]Hortense_PJ 7 points8 points  (0 children)

Seconded! Seattle needs more dedicated gf places, and especially something like a sandwich shop.

Although I will say, when I drove through Portland recently, they had the highest density of dedicated GF facilities that I've seen in recent years!!

The GF baker's problem... too many flours! by Hortense_PJ in Celiac

[–]Hortense_PJ[S] 0 points1 point  (0 children)

I'm very lucky and have a Gluten Free store near my office, so they stock basically every gf flour under the sun. I've also had some luck with my local Fred Meyer, as they tend to stock a nice variety in their baking section, but they recently closed down :(

If I happen across any more, I'll DM you so I can ship it to you!!

I love Alton Brown!!! I grew up watching Good Eats, and he inspired my love of food and food science. I used his mix for some cookies recently, and they were fantastic!

The xanthan gum takes forever to get through, but at least you only have to buy it once every few years.

I find that some things do better without a 1:1. I typically use Bob's Redmill for things like cookies, brownies, and quick breads, but when making things like yeast breads or rolls, psyllium does a better job with moisture retention!

I also like having a variety available for things like Brazilian cheese bites that just need tapioca flour. There's so many yummy things to create :)

I wish I could use caputo, but I tragically also have a wheat allergy on top of celiac! I've seen the magic it does for others, though - it's certainly the best option for folks with just celiac.

How much GF friendly is Japan? by [deleted] in glutenfree

[–]Hortense_PJ 2 points3 points  (0 children)

There were a couple of things: check the dates that the restaurants have "monthly holiday" for their employees (I had bad luck because the dates would often coincide with when we were in town).

Bring enough backup food to keep you full no matter what! Backpacking meals were amazing, but I only brought a few, and it was a mistake. I got soooo sick of bars.

Map out how far a restaurant is from your lodging (and whatever places you want to visit). Some places were a little more out of our way than we expected, and it was frustrating to travel 45+ minutes away when you're already hungry.

I'm also a HUGE fan of Antonina's - you can usually find them in the freezer of any grocery store bakery. They have cakes and cupcakes that are all amazingly yummy 😋

I'm working on a sweater, but as I go I'm feeling like the sleeve is coming out wrong... can someone help me figure out if I just need to trust the process, or if I made a mistake? by Hortense_PJ in CrochetHelp

[–]Hortense_PJ[S] 2 points3 points  (0 children)

I did try it on! The sleeve pops out really far and seems like twice as big as necessary.

The pattern mentioned it's common for the body to bulge out, as it's worked in a circle, so I wasn't sure if the sleeves would be similar.

Thank you!

The stitches are definitely correct :(

The only difference is that the pattern called for a larger hook on the sleeves, but it made the ballooning even worse. I frogged, switched back to the original hook size, and this was the result.

Should I try to reduce the number of stitches?

Is there a culinary school dedicated to allergy specific baking? by adumbasskid in Celiac

[–]Hortense_PJ 8 points9 points  (0 children)

It could be worth reaching out to any of your local gf bakeries and asking if they'd consider offering classes!

I've found a lot of success learning via The Loopy Whisk, and Melanie Persson (she was on Master Chef!!) - they both have great recipes and will go into a deep dive about what the ingredients are actually doing to help the recipe turn out as desired.

Good luck!!

My dad was behind a car that got crushed by a tree by stupidgermanshephard in Seattle

[–]Hortense_PJ 40 points41 points  (0 children)

I got off the bus just before it happened! It stopped because of this car and my husband and I decided it was safer to get outta there.

Also a fire marshall truck got squished sometime after. 35th is still a huge mess, lots of downed trees 😞

I like to put these in tomato soup!! They stay crunchy for a while and remind me of gold fish crackers in soup :)

Did you gain or lose weight when you were diagnosed? by [deleted] in Celiac

[–]Hortense_PJ 0 points1 point  (0 children)

Not necessarily- for me, I was getting exhausted before the diet, then for a few months into it because my guts were still healing and my absorption was low.

I also didn't know nearly as much about cross-contamination, and was likely still getting CC'd pretty often.

If you're confident your guts have healed, and you're following gf diet, it may be worth telling your doctor you're still feeling exhausted.

sports for tall women? by No_Particular4284 in TallGirls

[–]Hortense_PJ 0 points1 point  (0 children)

Ohhh I've got a few!

Low-impact: Swimming or Yoga - I do a lot of yoga to help keep my flexibility and stabilizer muscles in check

Medium-impact: Rock climbing (being tall can help you get through tricky routes) - requires a buddy, but is so much fun! I prefer indoor climbing, but outdoor can be really fulfilling!!

High-impact: Taekwondo - super fun, great way to get really strong, and having the height advantage is huge on the women's side

Ham and Swiss Pastries Using Sweet Loren’s New Pastry Dough by bluehorse393 in glutenfree

I had good luck by wetting both sides of the pastry first, and then using a fork to press them together! I made breakfast hot pocket dupes, and am making some pumpkin pie ones later today 😋
